In a large skillet melt the butter. Add in apples, brown sugar, cinnamon, lemon juice and flour. Mix to combine.
Cook over medium heat until apples are softened (about 15 minutes) stirring occasionally.
Set aside to cool slightly.
Make Cookie Crust
In a mixing bowl add butter, brown sugar, and granulated sugar. Mix until light and fluffy.
Add in egg and mix to combine.
Add flour, baking soda, and salt. Mix until no more dry bits of flour are left. Dough may still look crumbly, but as long as it can hold shape it is the perfect texture.
Fold in chocolate chips.
In a 9" pie pan press the cookie dough along the bottom and up the sides until everything is covered.
Make Crumb Topping
In a small bowl combine all the crumb topping ingredients. Using a pastry cutter or two forks cut together until mixture looks like wet sand. Set aside.
Assemble Pie
Layer apple pie filling inside the pie pan with cookie dough crust. Top with prepared crumb mixture.
Place in oven and bake for 30-35 minutes. The top should be lightly browned.
Allow pie to cool for at least 2 hours. This makes sure that the filling is able to set completely .
