Dutch Apple Pie with Chocolate Chip Cookie Crust

This dutch apple pie has the classic gooey apple filling with a chocolate chip cookie crust topped with a buttery crumb topping.

The combination of a chocolate chip cookie and apple pie has been on my mind for MONTHS. I could not get the idea out of my mind, this combination includes my favorite chocolate chip cookie recipe with a deviously gooey apple pie filling. Instead of topping with a traditional pie crust or more cookie dough a crumb topping felt like the perfect route to go.

Ingredients

  • Butter – used in all parts! To help cook the apples, in the cookie dough crust, and in the buttery crumb toppings
  • Apples – of course. We need these for the apple filling. I love to use honeycrisp, but can swap for your favorite apple
  • Sugar – both brown and granulated sugars
  • Cinnamon – adds the best warmth to our filling
  • Flour – all purpose is great here
  • Egg – adds structure to the cookie dough
  • Baking Soda – leavening agent for the cookie dough
  • Salt – just a pinch here and there for added flavor
  • Chocolate Chips – I used semi sweet, but this would be great with dark chocolate!

How to make out Cookie Apple Pie

MAKE APPLE FILLING

  • Preheat oven to 375. 
  • In a large skillet melt the butter. Add in apples, brown sugar, cinnamon, and flour. Mix to combine. 
  • Cook over medium heat until apples are softened (about 15 minutes) stirring occasionally. 
  • Set aside to cool slightly. 

MAKE COOKIE CRUST

  • In a mixing bowl add butter, brown sugar, and granulated sugar. Mix until light and fluffy. 
  • Add in egg and mix to combine. 
  • Add flour, baking soda, and salt. Mix until no more dry bits of flour are left. Dough may still look crumbly, but as long as it can hold shape it is the perfect texture. 
  • Fold in chocolate chips. 
  • In a 9″ pie pan press the cookie dough along the bottom and up the sides until everything is covered. 

MAKE CRUMB TOPPING

  • In a small bowl combine all the crumb topping ingredients. Using a pastry cutter or two forks cut together until mixture looks like wet sand. Set aside. 

ASSEMBLE PIE

  • Layer apple pie filling inside the pie pan with cookie dough crust. Top with prepared crumb mixture. 
  • Place in oven and bake for 30-35 minutes. The top should be lightly browned. 
  • Allow pie to cool for at least 2 hours. This makes sure that the filling is able to set completely.

Ingredients

Apple Pie Filling

  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup flour
  • 2 tbsp lemon juice

Chocolate Chip Cookie Crust

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 1/2 cup all purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup chocolate chips

Crumb Topping

  • 1/2 cup butter
  • 1 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar

Instructions

Make Apple Filling

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.
