Butterbeer stuffed French toast is a fun and easy breakfast with creamy butterscotch cream cheese filling. Ready in under 30 minutes and family approved!
In a small bowl combine cream cheese and ½ cup butterscotch syrup. Mix until combined.
Cut a slit into the side of each thick cut piece of bread. If you can’t find thick cut you can use 8 slices of regular bread.
Stuff each slice of bread with the cream cheese mixture. Or sandwich the cream cheese mixture between 2 slices of bread.
In a shallow bowl combine eggs, heavy cream, salt, and remaining ½ cup butterscotch syrup. Mix to combine.
Set each stuffed piece of bread into the egg mixture and allow to soak up the mixture for 3-5 minutes per side.
Pre heat griddle to low heat.
Add the bread to the griddle and cook until golden brown on each side.
Remove from heat and enjoy with additional butterscotch syrup.

Tips for the Best Stuffed French Toast
Use low heat. This is the most important tip! Because the bread is thick and stuffed, you need low heat so the outside doesn't burn before the inside cooks through. Be patient - it's worth it.Soften your cream cheese first. Room temperature cream cheese mixes smooth and spreads easily into the bread pocket. Cold cream cheese just creates lumps and tears the bread.Don't rush the soak. Give the bread a full 3-5 minutes per side in the egg mixture. Thick bread needs time to really absorb the custard so every bite is rich and flavorful - not dry in the middle.Seal the edges. After stuffing, gently press the bread opening closed before dipping in the egg mixture. This helps keep the filling inside while it cooks. You don't want all that butterscotch cream cheese melting out onto the griddle!
