Hull and slice strawberries and add to a medium sized pot with granulated sugar and lemon juice.
Bring to a simmer over medium heat and allow to simmer until jam has thickened (about 30-45 minute). You want the mixture to be able to coat the back of a wooden spoon.
Add to a jar and store in the refrigerator for 2-3 weeks or freezer for 2-3 months.
