Mediterranean Chicken Quinoa Grain Bowls
These Mediterranean Chicken Quinoa Grain Bowls are packed with lemon-herb chicken, fresh cucumber tomato salad, feta, and quinoa. A healthy, protein-packed bowl perfect for meal prep or easy weeknight dinners.

Ingredients
Grain Bowls
4
chicken breast cutlets

olive oil

salt

teaspoon
paprika
1
teaspoon
dried oregano
1
teaspoon
garlic powder
½
lemon
juiced
4
cups
cooked quinoa
1
cup
feta
crumbled
Cucumber Tomato Salad
½
cup
sliced cucumbers
½
cup
sliced tomatoes
¼
cup
kalamata olives
halved
½
red onion
thinly sliced
2
tablespoon
fresh dill
chopped
½
lemon
juiced
salt
to taste
Instructions
In a bowl add olive oil, salt, paprika, oregano, garlic powder, and lemon juice. Then add chicken cutlets and allow to marinate for 30 minutes.
Cook chicken on a griddle over medium heat for 5-6 minutes per side or until chicken reaches an internal temperature of 165F.
Remove from heat and allow to rest for 5 minutes before slicing into strips.
In a second bowl add all the Cucumber Tomato Salad ingredients. Mix to combine.
Assemble 4 bowls, each with 1 cup of cooked quinoa, 1 sliced chicken cutlet, ½ cup cucumber tomato salad, and ¼ cup crumbled feta and enjoy!
