Overnight Blueberry French Toast Casserole
This French toast casserole has a blueberry sauce and is made the night before and creates an easy and delicious breakfast.

Ingredients
For the Casserole
1
loaf brioche bread
torn into pieces
6
eggs
1
cup
heavy cream
1
teaspoon
vanilla extract
1
teaspoon
cinnamon
Lemon Blueberry Sauce
2
cups
blueberries
fresh or frozen
1
zest
lemon
1
juice
lemon
½
cup
sugar
Instructions
In a sauce pan combine blueberries, lemon juice, lemon zest, and sugar. Cook over medium heat until the sauce has thickened.
In a 9 x 13 casserole dish place torn pieces of bread.
In a medium sized bowl combine eggs, heavy cream, vanilla extract, and cinnamon. Mix to combine, pour over top of the bread.
Cover the casserole dish and place in the fridge overnight (let the mixture combine for at least 6 hours).
Preheat oven to 350. Place casserole dish in the oven and bake for 30-35 minutes.
Top with maple syrup and enjoy!
