Place the butter in small saucepan over medium heat. Once melted, the butter will begin to foam. Keep stirring until the butter begins to turn a light amber color. The foam will subside and you will have little brown specks (milk solids) at the bottom of the pan. Cool for 30 minutes.
In a bowl add browned butter, brown sugar and white sugar. Mix to combine.
Add in egg and vanilla extract. Mix well.
Add flour, baking soda, baking powder and salt. Mix until til just combined. Then fold in chocolate chips.
Divide dough into 6 balls and place onto a parchment lined baking tray.
Flatten each ball into a disk and place marshmallow and graham cracker square in the middle. Carefully wrap the cookie dough around the marshmallow leaving the graham cracker square on the bottom.
Place graham cracker side down onto the parchment paper and bake for 12-15 minutes or until golden brown.
