This homemade zucchini bread recipe is a family favorite. My family devours an entire loaf in a day and can easily be made into zucchini muffins as well.
In a large bowl add eggs and sugar. Mix to combine
Add in vanilla and butter. Mix to combine.
Add flour, baking powder, baking soda, cinnamon, and salt. Mix to combine.
Fold in zucchini mixing until no more dry patches remain.
Pour into 2 loaf pans and bake for 60 minutes

Making this recipe into muffins is super simple! Prepare the batter exactly as described, and divide into 24 muffin tins. Bake at 350 for 20-25 minutes.
