In a large bowl, combine the ground chicken with the onion, chopped herbs, lemon zest, and seasonings. Mix well.
Using wet hands, divide meat mixture into four equal portions and shape into long patties (about 6 inches long). Place into the freezer for 10 minutes to help the mixture set up before placing onto the grill.
Place patties onto the grill and cook for 6-8 minutes per side. My grill was about 350º F.
Assemble your wrap by starting with a tortilla, a generous slather of Zacca Hummus, chicken kefta patty, arugula, diced cucumber, and cherry tomatoes. Wrap tightly and enjoy as is, or place into a skillet and cook over medium heat for 1-2 minutes per side.
