- 1 lb Ground Chicken
- 1/2 Red Onion grated
- 1/2 cup Fresh Cilantro finely chopped
- 1/4 cup Fresh Mint finely chopped
- 1 tsp Salt
- 1 tsp Paprika
- 1/2 tsp Ground Cumin
- 1/2 tsp Ground Turmeric
- 1 zest Lemon
- 1 cup Zacca Hummus
- 2 cups Arugula
- 1 Cucumber diced
- 1 cup Cherry Tomatoes quartered
- 4 Tortillas
Instructions
- Preheat grill to medium heat.
- In a large bowl, combine the ground chicken with the onion, chopped herbs, lemon zest, and seasonings. Mix well.
- Using wet hands, divide meat mixture into four equal portions and shape into long patties (about 6 inches long). Place into the freezer for 10 minutes to help the mixture set up before placing onto the grill.
- Place patties onto the grill and cook for 6-8 minutes per side. My grill was about 350º F.
