This Cinnamon Roll Stuffed French Toast gives all the flavors of a cinnamon roll without the work! Cinnamon roll filling between two slices of brioche bread topped with a creamy glaze your whole family will love this.
Combine all the ingredients for the cinnamon roll glaze in a small bowl. Set aside for later.
In a small bowl combine softened butter, brown sugar, and cinnamon. Mix to combine.
Spread butter mixture onto half of the slices of bread, then top with remaining slices of bread to make a sandwich.
In a shallow pan add eggs, vanilla, and heavy cream. Mix to combine.
Dip each sandwich of bread into egg mixture, allowing the sandwich to absorb the liquid for a minute or two on each side.
Heat a skillet over medium heat and add a tablespoon of butter.
Add bread to the skillet and cook until the bread is golden brown (about 2 minutes) then flip and cook until golden brown again. Repeat with all sandwiches.
Top each sandwich with glaze and enjoy immediately.
