Place your breadcrumbs into a large bowl, and add the milk to them to soak for 5 minutes. Add in your ground beef with, Italian seasoning, salt, pepper, onion, garlic and the egg.
Using your clean hands, gently mix the beef together with the ingredients until well-combine. Scoop out 2 tablespoon-size portions of the meat mixture (I like to use my cookie scoop for this), and place onto a tray or large platter to hold.
In an oven safe skillet brown the meatballs over medium heat. Approximately 2 minutes on each side.
Cover the meatballs with marinara sauce. Take 1 tbsp sized scoops of the ricotta mixture and distribute throughout the pan.
Bake in oven for 20 minutes.
Notes
NOTE: if you do not have an oven safe skillet brown the meatballs and then place into a baking dish. Assemble the remaining ingredients in the baking dish. MAKE AHEAD: Make the meatballs up ahead of time and then place in the fridge or freezer until you are ready to make the recipe.
