Greek Chicken Meatballs with Lemon Orzo

Ingredients
  

Greek Chicken Meatballs

  • 1 lb Ground Chicken
  • 1/2 cup Feta Cheese cumbled
  • 1/2 cup Bread Crumbs
  • 1 Egg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 Lemon zested
  • 1/2 cup Onion finely diced

Lemon Orzo

  • 1 Cup Orzo
  • 2 tbsp Lemon Juice fresh squeezed if possible
  • 2 tbsp Butter

For Serving

  • Cucumber
  • Tomatos
  • Tzatziki
  • Feta
  • Fresh Dill

Instructions
 

  • Preheat oven to 350.
  • In a large bowl combine all meatball ingredients and mix well to combine.
  • Divide into 12 equally sized sections and roll into a ball.
  • Place onto a parchment lined baking sheet and bake for 20-25 minutes or until internal temperature reaches 165F.
  • Cook orzo according to package, drain and add to a medium sized bowl.
  • Add butter and lemon juice. Mix to combine.
  • Add orzo, cooked meatballs, cucumbers, tomatoes, Tzatziki, extra feta, and fresh dill to a bowl and enjoy!
