Super easy greek chicken meatballs with lemon orzo are the perfect weeknight meal or a great meal prep lunch.

Easy Greek Chicken Meatballs

These Greek Chicken Meatballs are a great burst of flavor and are a fun twist on traditional meatballs. Paired with a lemon orzo you have the perfect weeknight dinner or easy lunch to meal prep.

Ingredients

Greek Chicken Meatballs

  • Ground Chicken – this could be swapped for ground turkey, ground beef or ground sausage.
  • Feta Cheese – I love adding cheese to my meatballs for extra flavor
  • Bread Crumbs – to hold the meatballs together
  • Egg – for binding the meatballs
  • Seasonings – salt, pepper, oregano, dill, garlic powder, onion powder
  • Lemon Zest – love the addition of lemon flavor to the meatballs
  • Onion – finely diced for added flavor

Lemon Orzo

  • Orzo – one of my favorite pastas, you can swap this for your favorite pasta or even rice.
  • Lemon Juice – fresh squeezed if possible.
  • Butter – for a creamy texture
  • Salt – for added flavor when cooking the orzo

For Serving

  • Cucumber
  • Tomatos
  • Tzatziki
  • Feta
  • Fresh Dill

How to Make Greek Chicken Meatballs with Lemon Orzo

  1. Preheat oven to 350.
  2. In a large bowl combine all meatball ingredients and mix well to combine.
  3. Divide into 12 equally sized sections and roll into a ball.
  4. Place onto a parchment lined baking sheet and bake for 20-25 minutes or until internal temperature reaches 165F.
  5. Cook orzo according to package, drain and add to a medium sized bowl.
  6. Add butter and lemon juice. Mix to combine.
  7. Add orzo, cooked meatballs, cucumbers, tomatoes, Tzatziki, extra feta, and fresh dill to a bowl and enjoy!

Ingredients

Greek Chicken Meatballs

  • 1 lb Ground Chicken
  • 1/2 cup Feta Cheese cumbled
  • 1/2 cup Bread Crumbs
  • 1 Egg

  • 1/2 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp dried dill
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 Lemon zested
  • 1/2 cup Onion finely diced

Lemon Orzo

  • 1 Cup Orzo
  • 2 tbsp Lemon Juice fresh squeezed if possible
  • 2 tbsp Butter

For Serving

  • Cucumber
  • Tomatos
  • Tzatziki
  • Feta
  • Fresh Dill

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I wanted the nostalgic crunch of those strawberry cheesecake ice cream bars… but with raspberry and an actual cheesecake twist. So naturally I had to make it happen. 

And honestly? This might be one of those recipes that makes you stop after the first bite and think, where has this been my whole life?

I love companion planting because every plant has a purpose. Some help attract pollinators, some deter pests, and some simply help maximize space in the garden beds. And honestly… mixing veggies and flowers together just makes the garden feel magical. 🌼🐝

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
