Street Corn Smash Burger Tacos feature crispy corn tortillas pressed with seasoned ground beef and topped with creamy Mexican street corn.

If you love bold flavors and easy weeknight meals, these Street Corn Smash Burger Tacos are the ultimate mash-up of two favorites: juicy smash burgers and classic Mexican street corn. Crispy corn tortillas are pressed with seasoned ground beef and cooked smash-style on a hot griddle, then topped with a creamy, zesty street corn mixture loaded with charred corn, cotija cheese, lime, and fresh cilantro.

The result is a taco that’s crispy, juicy, creamy, and packed with flavor in every bite. These tacos are perfect for Taco Tuesday, backyard cookouts, or a fun twist on burger night. Best of all, they come together quickly with simple ingredients.

Why You’ll Love These Smash Burger Tacos

  • Crispy smash-style tortillas
  • Juicy seasoned ground beef
  • Creamy, tangy Mexican street corn topping
  • Ready in about 30 minutes
  • Perfect for weeknight dinners or casual entertaining

What Are Smash Burger Tacos?

Smash burger tacos are made by pressing ground beef directly onto a tortilla before cooking. When the tortilla is placed meat-side down on a hot griddle, the beef forms a crispy crust similar to a classic smash burger while the tortilla becomes lightly toasted.

The combination creates a thin, crispy burger taco that’s incredibly flavorful and easy to eat.

For this version, the tacos are topped with a creamy street corn mixture inspired by Mexican elote, giving them a bright, tangy finish.

Ingredients

Taco Base

  • Corn Tortillas – Provide a sturdy base and crisp beautifully on the griddle.
  • Ground Beef – Pressed thin onto the tortillas to create a crispy smash-burger style crust.
  • Cumin, Paprika & Salt – Simple spices that add warmth and savory depth to the beef.

Mexican Street Corn Topping

  • Corn – Lightly charred for smoky sweetness.
  • Bell Pepper – Adds color and subtle crunch.
  • Cilantro – Fresh and herbaceous, balancing the richness of the beef.
  • Jalapeño – Provides mild heat that complements the creamy dressing.
  • Red Onion – Adds bite and texture.
  • Cotija Cheese – A salty, crumbly cheese that’s classic in street corn.
  • Sour Cream & Lime Juice – Create a tangy, creamy dressing that ties everything together.

How to Make Street Corn Smash Burger Tacos

Step 1: Make the Street Corn Topping

Heat a griddle or skillet with a small amount of oil or butter and cook the corn until lightly charred.

Transfer the corn to a large bowl and add diced bell pepper, minced cilantro, jalapeño, and red onion.

In a small bowl, whisk together sour cream, lime juice, cumin, paprika, and salt. Pour the dressing over the corn mixture and add cotija cheese. Mix well and set aside.

Step 2: Prepare the Smash Burger Tacos

Preheat a griddle or large skillet to medium-high heat.

Season ground beef with salt, cumin, and paprika then divide the ground beef into six portions. Press each portion directly onto a corn tortilla, spreading the beef evenly to the edges.

Place the tortillas meat-side down onto the hot griddle. Cook for about 3–5 minutes until the beef develops a crispy crust.

Flip the tortillas and cook for another 1–2 minutes to toast the tortilla.

Remove from heat.

Step 3: Assemble the Tacos

Top each smash taco with a generous spoonful of the street corn mixture.

Serve immediately and enjoy while hot and crispy.

Tips for the Best Smash Burger Tacos

  • Press the beef thin so it cooks evenly and crisps nicely
  • Use a hot griddle to develop a flavorful crust
  • Fresh lime juice makes a big difference in the street corn topping
  • Warm tortillas slightly before pressing the meat if they crack

Optional Add-Ons

These tacos are delicious as-is, but you can easily customize them with:

  • Sliced avocado
  • Hot sauce or chipotle crema
  • Shredded lettuce
  • Pickled jalapeños

What to Serve With Street Corn Tacos

Pair these tacos with simple sides like:

  • Mexican rice
  • Refried or black beans
  • Chips and guacamole
  • A fresh tomato or cabbage slaw

Storage Tips

The smash tacos are best enjoyed fresh while the tortillas are crispy. If you have leftovers, store the street corn topping and cooked tacos separately in the refrigerator for up to 2 days and reheat the tacos in a skillet before serving.

Final Thoughts

These Street Corn Smash Burger Tacos combine everything we love about burgers and tacos into one irresistible dish. With crispy tortillas, juicy seasoned beef, and creamy street corn topping, they’re bold, fun, and guaranteed to become a new favorite for taco night.

100,000 of you. I’m honestly still trying to wrap my head around that.

What started as me just sharing what I was making for my family, little moments, and pieces of my life has turned into this incredible community, and that’s because of YOU.

The comments, the messages, the times you’ve made my recipes in your own kitchens… it all means more than I can put into words.

Thank you for being here, for supporting me, and for growing alongside me. I don’t take a single one of you for granted.

We’re just getting started 🤍

Comment GARDEN and I’ll send you all the details to your inbox.

The best thing about these garden beds is that they can be made to any dimension that you want! I created four 4x8 beds, two 3x8 beds, and two 2x3 beds using the exact same method each time!

Materials (for ONE 4x8 bed)
* (4) 2x8 boards, cut to 8 ft long
* (4) 2x8 boards, cut to 4 ft long
* (24) 3” exterior wood screws
* (4) 2x4 boards, cut to 14” long

Instructions
1. Cut Your Boards (if needed)
Cut your boards to length before assembling. We had (4) 12’ boards, we cut into an 8’ board and 4’ board. However, you can also buy (6) 8’ boards and then cut 2 of them in half.

2. Drill Pilot Holes (optional)
On each 8’ board measure ¾” in from each end and Drill 2 pilot holes per end, spaced about 2–3” from the top and bottom
This helps prevent the wood from splitting when you add screws.

3. Build the First Layer (Bottom Frame)
Lay out:
 * (2) 8 ft boards (long sides)
 * (2) 4 ft boards (short sides)
Form a rectangle with the short boards sitting inside the long boards. Then attach the boards using 3” screws into the pilot holes you created in the previous step.

4. Stack the Second Layer
Repeat process by placing the second set of boards directly on top of the first frame, lining up edges carefully

5. Add Corner Supports
Place the 2x4 board inside each corner
These should sit flush with the bottom and sit an inch below the top.
Screw through the outside boards into the 2x4 board once in the top 2x8 board and once in the bottom 2x8 board.

 Pro Tips
Use untreated cedar for best longevity, however I used fir for a more cost effective version. These may only last me 5 years, BUT the cost of cedar deterred me from going that route.

Avoid pressure-treated wood unless it’s labeled safe for gardens

Use a garden safe stain on the interior before filling to help with board longevity.
