In a skillet add all the peach pie filling ingredients. Cook over medium heat until peaches are softened. Set aside.
In a flat dish add eggs, vanilla, cinnamon, and heavy cream. Mix to combine. Set aside.
Spread each slice of brioche with a generous amount of cream cheese. Layer on the peach pie filling to one piece and sandwich a second piece on top. Repeat 2 more times.
Melt 2 tbsp butter in a large skillet over medium heat.
Dip each sandwich into the egg mixture making sure to coat both sides.
Place sandwich into cast-iron skillet and cook for 3-4 minutes, flip and cook an addition 3-4 minutes.
Serve with a sprinkle of powdered sugar, syrup, or just by itself!
