To assemble the Peach Pie Stuffed French Toast, take two slices of thick bread, such as brioche or challah. Spread a generous layer of cream cheese on each slice. Next, spoon a generous amount of the peach filling onto one slice of bread, spreading it evenly. Carefully place the second slice on top to create a sandwich-like structure. Press the slices together gently to ensure the filling stays intact.

Then dip each side of the sandwich into an egg mixture of eggs, milk, vanilla, and cinnamon. Soaking the bread for 30-60 seconds on each side. In a skillet melt butter and cook your French toast for a few minutes on each side, ensuring it is nice and golden brown before flipping.

Ingredients

Peach Pie Filling (could use canned too)

  • 1 peach pitted and thinly sliced
  • 1/4 cup brown sugar
  • 2 tbsp butter
  • 1 tsp vanilla
  • 1 tsp cinnamon

French Toast

  • 6 oz cream cheese
  • 6 slices brioche bread
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • 2 tbsp heavy cream or milk
  • 2 tbsp butter

Instructions

  • In a skillet add all the peach pie filling ingredients. Cook over medium heat until peaches are softened. Set aside.
  • In a flat dish add eggs, vanilla, cinnamon, and heavy cream. Mix to combine. Set aside.
  • Spread each slice of brioche with a generous amount of cream cheese. Layer on the peach pie filling to one piece and sandwich a second piece on top. Repeat 2 more times.
  • Melt 2 tbsp butter in a large skillet over medium heat.
  • Dip each sandwich into the egg mixture making sure to coat both sides.
  • Place sandwich into cast-iron skillet and cook for 3-4 minutes, flip and cook an addition 3-4 minutes.
  • Serve with a sprinkle of powdered sugar, syrup, or just by itself!

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
