These viral sausage gravy bombs are popular for a good reason! Combining the classic biscuit and gravy into a portable breakfast creation, they are a family favorite!

Starting your morning with a hearty and satisfying breakfast can set the tone for the entire day. Biscuits and gravy are a favorite hearty breakfast, but spending the time on busy mornings to make them doesn’t always happen! Enter these biscuit and gravy bombs: a delicious, easy-to-prepare breakfast that can be assembled the day before and baked in the oven while you hit snooze a few extra times.

This breakfast combines biscuits with creamy sausage gravy creates a comforting and flavorful dish that everyone will love. Plus, it’s incredibly easy to customize with your favorite toppings and ingredients.

To make them ahead of time either make them completely, store in the refrigerator or freezer and warm them up in the morning (I’ll share my secret to make them taste freshly baked in the recipe) OR you can make them up the night before and pop them in the fridge before baking. Then in the morning all you need to do is pop them in the oven.

What makes this recipe different?

This breakfast bomb recipe takes the deliciousness of biscuits and gravy and makes it portable! They are great to heat up in the morning as my husband is heading out the door. However, even if you aren’t jutting out the door these breakfast biscuit bombs are great just at home too! This recipe calls for homemade sausage gravy. Before you back away with your hands up that you don’t know how to make gravy, I promise you can! Check out the video with the recipe and I’ll show you just how easy homemade gravy can be!

Biscuit and Gravy Casserole Ingredients

  • Biscuits – I used refrigerator biscuits, but homemade would also be delicious!
  • Milk – for the gravy base
  • Sausage – I use bulk breakfast sausage
  • Flour – helps to thicken the gravy
  • Bouillon – I love to add a scoop of Roasted Chicken Better than Bouillon to my gravy. It helps to add such great flavor to your gravy! I swear this is my secret to making the best homemade gravy.

How to Make Biscuit and Gravy Breakfast Bombs

SAUSAGE GRAVY

  • In a large skillet cook the sausage.
  • Add in flour, stir to coat the sausage and cook for about 2 minutes. Add in milk bouillon and pepper. Simmer until thickened.

ASSEMBLE biscuit bombs

  • Roll the biscuits into a small circle, then fill with about 1/4 cup gravy. Pinch up to middle to seal and place seam side down on a baking sheet. Repeat with remaining biscuits.
  • Place filled biscuits onto a baking sheet and bake according to biscuit packaging.

MAKE AHEAD VERSION

  • VERSION 1: make them completely as directed, store in the refrigerator or freezer and warm them up in the morning
  • VERSION 2: make them up the night before and pop them in the fridge before baking, bake according to package in the morning.

How to Reheat

My favorite way to reheat these is to just warm them back up in the oven! Bake for 5-7 minutes at 350 and you will have a biscuit bomb that tastes like you just baked it up! However, if you are in a hurry simply heat them completely in the microwave, then place onto a baking sheet. Broil for 1-2 minutes, watching closely! Nothing is worse than walking away and coming back to burnt breakfast bombs (trust me, been there!).

Customization ideas:

  • Add chopped vegetables to the sausage, such as onions, peppers, or mushrooms.
  • Add cheese, such as Monterey Jack, Swiss, or pepper jack to the filling.
  • Add scrambled eggs to the filling!
  • Drizzle with hot sauce for a spicy kick.

These sausage gravy biscuit bombs are so delicious! They are easy to prepare, incredibly delicious, and sure to become a family favorite. So go ahead, give it a try and start your day off right!

Notes

TIP: I like to double this recipe and freeze the remaining. Pull out what I want the night before to thaw in the fridge, then place in oven on broil for a few minutes to crisp the biscuit up. BECAREFUL not to forget them in the oven and watch carefully.

Just curious if you could freeze them and take them on a camping trip thaw the night before and cook over a campfire in foil?

These sound very much like the Runzas (of Nebraska) or Bierocks — should be delicious.
