These lemon blueberry donut holes are made with no yeast and are bake in the oven or air fryer for a super simple brunch favorite.

No Yeast Lemon Blueberry Donut Holes

Donuts are a fan favorite in our house (as I’m sure they are at your). The process of making a yeasted and fried donut is a lot, so it rarely happens. This Lemon Blueberry No Yeast Donut Recipe is made with no yeast, in the air fryer (or oven) and turn out perfectly fluffy every single time. No need to pull out the deep fry them to get a great result.

No Yeast Donut Hole Ingredients

Flour – all purpose is used here, if you want an even lighter result you could swap for cake flour.

Icelandic Skyr – this can be swapped for greek yogurt, but iceland skyr is my favorite.

Baking Soda/Powder – both are used to help get a nice fluffy result.

Lemon – both the zest and the juice are used to get a great lemony flavor.

Wild Blueberries – fresh or frozen. I prefer wild blueberries as they are typically a little smaller than regular blueberries.

Butter – brushed on the top of the donuts before baking to help the sugar cook and brown everything up.

Sugar – granulated for a lemon sugar topping.

How to Make Air Fryer Donut Holes with No Yeast

  • Preheat air fryer at 350 or oven to 400.
  • In a bowl combine flour, skyr, baking soda, baking powder, wild blueberries, lemon juice, and salt. Mix until dough starts to come together, then pour onto the counter and knead for 5 minutes. Adding more flour if dough becomes too sticky.
  • Section dough into 12 pieces and shape each piece into a round ball.
  • Place round balls onto a piece of parchment paper and brush with melted butter.
  • Bake in air fryer or oven for 5 minutes, turn each ball and bake an additional 5-6 minutes. If baking in oven bake for 6 minutes each side.
  • In a small bowl combine granulated sugar and lemon zest. Mix to combine.
  • Remove donut holes from oven or air fryer, brush with more melted butter and roll in lemon sugar mixture.
  • Enjoy immediately.

Donut

  • 1 1/2 cups all purpose flour
  • 2/3 cup icelandic skyr I LOVE Painterland Sisters brand
  • 1/2 cup wild blueberries
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 3-4 tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup butter melted

  • 1/4 cup granulated sugar
  • 1 zest lemon

Strawberry Rhubarb Curd
2 cups rhubarb sliced
2 cups strawberries sliced
1/4 cup water
3/4 cup granulated sugar
4 egg yolks
1/2 cup butter

Graham Cracker Crust
2 cups graham cracker crumbs
1/2 cup butter melted

Strawberry Meringue
3 large egg whites
3/4 cup granulated sugar
1/2 tsp cream of tartar
1 oz freeze dried strawberries

It does all the kneading without having to dirty my hands or a large stand mixer. Plus, I can then easily swap the battery into the hand blender or the vacuum to use in other parts of the recipe, and move around the kitchen with ease.

INGREDIENTS
Pesto
1 cup fresh basil leaves
2 tbsp pine nuts
1/4 cup freshly grated parmesan cheese
3 small cloves garlic 
2 tbsp olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon salt
freshly ground black pepper, to taste

Bread
2 1/4 tsp yeast
2 tbsp granulated sugar
1 1/2 tsp salt
3 tbsp butter, melted
1 egg
3 cups flour
1 tsp garlic powder
1 tsp italian seasoning
1 cup milk, warmed
1 cup shredded mozzarella

INSTRUCTIONS
Make the Pesto
In the mini chopper attachment of the Zwilling XTEND Hand Blender pulse all pesto ingredients until everything is blended together and relatively smooth. Add a drizzle more olive oil to thin out, if desired. Taste and add pepper (and/or more salt) if desired. Set aside for later. 
 
Make the Bread
In a large bowl combine warmed milk with yeast and sugar. Set aside until foamy. If your yeast does not foam up, do not proceed to the next step. This means your yeast is not active.
Once the yeast mixture is foamy add melted butter, egg, salt, Italian seasoning, garlic powder and 2.5 cups of flour. Mix to combine with the Zwilling XTEND Cordless Hand Mixer with the dough hooks, adding in additional flour until the mixture pulls away from the bowl.
Knead mixture for 7-10 minutes, or until the dough is smooth. Place back into bowl, cover, and let rise for an hour, until doubled.
Place dough onto counter and divide into 8 sections. Flatten each section into a circular shape and spread with pesto and shredded cheese then fold in half. Place seam side down into a greased loaf pan and repeat with remaining sections. Allow to rise for an additional 30-60 minutes. 
Bake at 350 for 35-40 minutes. Top with more butter if desired.

INGREDIENTS
2 cups rhubarb sliced
2 cups strawberries sliced
1/4 cup water
3/4 cup granulated sugar
4 egg yolks
1/2 cup butter

INSTRUCTIONS
In a medium sized sauce pan add sliced rhubarb, strawberries, and water. Simmer over medium heat until rhubarb has softened.

Blend mixture with an immersion blender and then pour through a fine mesh strainer. You should have about 1 cup of liquid after straining.

Add sugar, egg yolks and 1 cup of strawberry rhubarb mixture back to a clean sauce pan. Whisk together and bring to a simmer until the mixture reaches 165 F.
Remove mixture from the heat and add in butter. Mix until butter has melted.

Transfer curd into a bowl and place a piece of plastic wrap on top to prevent a skin forming. The curd will thicken more as it cools. Store in the refrigerator.
