This pineapple dragon fruit smoothie is creamy and delicious with a layer of pineapple topped with a layer of dragon fruit for a high protein breakfast.
OPTIONAL: In a small bowl combine 1 tbsp greek yogurt with chia seeds (if using). Take this mixture and smear onto the inside of a 16-20 oz cup. This creates the dragonfruit like look on the inside of your glass.
In a blender add frozen pineapple, greek yogurt, 1/4 cup coconut milk, and protein powder. Blend until smooth.
Pour half of the mixture into your prepared glass.
Add frozen dragonfruit to the blender and remaining coconut milk (if needed). Blend until smooth and carefully pour on top of the pineapple mixture to create a layered smoothie.
