Sausage and Mushroom Gnocchi Skillet
This sausage and mushroom gnocchi skillet is made with tomato sauce and is a simple and easy one pan meal for your weeknight dinner.

- 1 tbsp olive oil
- 12 oz sausage links sliced
- 8 oz mushrooms sliced
- 3 cloves garlic minced
- 16 oz gnocchi
- 1 tsp italian seasoning
- 15 oz tomato sauce
- 1/2 cup chicken broth
- 1 cup spinach
- 1/2 cup parmesan cheese grated
- salt and pepper to taste
In a large skillet heat oil and sliced mushrooms. Sauté over medium heat for 5 minutes.
Add in sliced sausage and minced garlic. Cook an additional 5 minutes.
Add in gnocchi, tomato sauce, Italian seasoning, and chicken broth. Bring to a boil and cook for 5 minutes (or until gnocchi is cooked).
Add in spinach and parmesan, cook until spinach is wilted.
Season with salt and pepper to tasted and enjoy.
