Winter Salad with Kale and Oranges
This winter salad features cara cara or blood oranges, kale, and spinach topped with an easy homemade vinaigrette.

Ingredients
Salad

bunch
kale
3
cups
fresh spinach
2
oranges
I used blood and cara cara
¼
cup
parmesan
shredded
½
cup
pecans
chopped (optional)
Dressing
1
tablespoon
honey
¼
cup
olive oil
¼
cup
balsamic
2
tablespoon
orange juice
Instructions
Dressing
Combine all the dressing ingredients in a jar and mix to combine. Set aside.
Salad
Peel and cut the oranges. If using blood or cara cara oranges slicing them will review the beautiful colors much better than peeling alone.
Remove the kale from the tough ribs and chop into small pieces.
In a large bowl combine all the salad ingredients. Top with dressing and mix to combine.
Top with additional parmesan and oranges if desired.
Notes
This salad is a great one to make ahead of time. The kale and spinach and stand up to having dressing on them and even get better overnight.
