Winter Salad with Kale and Oranges

This winter salad features cara cara or blood oranges, kale, and spinach topped with an easy homemade vinaigrette.

One thing I have been trying to be better about is eating seasonally. Don’t get me wrong, I am thankful to live in a world that we can get strawberries year round, but there is something to be said about eating produce that is in peak season. So, when I saw these Blood Oranges and Cara Cara in my local grocery store I knew I needed to snag them up. These two particular oranges can only be found in the winter months and pair beautifully with kale and spinach.

Ingredients

  • Kale – this is a really great green that holds up well in salads
  • Spinach – another great in season green
  • Oranges – I used Blood Oranges and Cara Cara Oranges. Blood oranges have a beautiful deep red orange color while the Cara Cara oranges have a pink orange color to them (almost grapefruit color)
  • Parmesan – adds a nuttiness to the salad
  • Pecans – optional but adds an extra crunch to the salad
  • Vinaigrette – honey, olive oil, balsamic vinegar, and orange juice creates the best combination for this salad.

Instructions

  • Combine all the dressing ingredients in a jar and mix to combine. Set aside. 
  • Peel and cut the oranges. If using blood or cara cara oranges slicing them will review the beautiful colors much better than peeling alone. 
  • Remove the kale from the tough ribs and chop into small pieces. 
  • In a large bowl combine all the salad ingredients. Top with dressing and mix to combine. 
  • Top with additional parmesan and oranges if desired.

Can I make this salad ahead of time?

Yes!! Kale and spinach hold up really well in this salad. I love to make a huge batch and eat it the next few days.

Can I make this with other oranges?

Absolutely! If you can’t find blood or cara cara oranges you can substitute in any other orange that you can find!

Ingredients

Salad

  • 1 bunch kale
  • 3 cups fresh spinach
  • 2 oranges I used blood and cara cara
  • 1/4 cup parmesan shredded
  • 1/2 cup pecans chopped (optional)

Dressing

  • 1 tbsp honey
  • 1/4 cup olive oil
  • 1/4 cup balsamic
  • 2 tbsp orange juice

Instructions

Notes

This salad is a great one to make ahead of time. The kale and spinach and stand up to having dressing on them and even get better overnight.

Girls day, but make it a little messy, a little creative, and a lot delicious. 

I hosted the sweetest paint + pot afternoon with my friends. Just us, some blank pots, and zero pressure to be “good” at anything except having fun. 

We painted, we laughed, we caught up on life… and of course, we ate really well:
🍋 Lemon blueberry cake 
🍯 Garlic honey chicken with fresh peach salsa 
🥙 Greek salad hummus bites 

It’s wild how something this simple can fill your cup so much. No big production, just intentional time together, and honestly, we need more of that.

10/10 recommend hosting your girls, even if it’s not perfect. Especially if it’s not perfect 🤍
