These cookie ice cream sandwiches are made with a waffle chocolate chip cookie and vanilla ice cream to create the best summer dessert.

vanilla ice cream

unsalted butter
softened

brown sugar

granulated sugar

egg

vanilla extract

all purpose flour

baking soda

tsp
salt

cup
chocolate chips
Instructions
In a large bowl combine softened butter, brown sugar, and granulated sugar. Mix together until light and fluffy.
Add in egg and vanilla. Mix until well combined.
Add in flour, baking soda, and salt. Mix until just combined.
Fold in chocolate chips.
Preheat a mini waffle maker and add approximately 2-3 tablespoons of cookie dough to the waffle maker. Close the lid and cook for 2-3 minutes.
Remove cookie from the maker and repeat with remaining dough. Allow cookies to cool completely.
To 6 of the waffle cookies add approximately 1/2 cup of ice cream. Top with remaining 6 waffle cookies.
Enjoy immediately or store in an air tight container in the freezer.
