This stuffed chicken breast has has a creamy cheese and zucchini mixture for an easy weeknight dinner.
Ingredients
- Chicken Breasts – could also be done with boneless chicken thighs
- Seasonings – garlic powder, onion powder, paprika, salt
Filling
- Shredded Zucchini
- Shredded Cheese – I like to use cheddar
- Cream Cheese
- Seasonings – garlic powder, onion powder, salt
How to Make Cheesy Zucchini Stuffed Chicken Breast
Preheat oven to 425.
Use a sharp knife to slice a pocket into the side of each chicken breast, but don’t cut all the way through.
Season both sides of the chicken breasts with seasonings listed.
In a medium sized bowl combine all filling ingredients. Mix to combine.
Stuff each chicken breast with the filling and secure closed with toothpicks.
Heat an oven safe skillet and sear both sides of the chicken breasts for 2-3 minutes to brown them.
Transfer chicken to the oven and cook an additional 15-20 minutes or until the chicken reaches 165 F.
Let chicken sit for 5 minutes, remove toothpicks, and enjoy!
** if you don’t have an oven safe skillet transfer to a baking sheet after searing
