How to Make Soft Pretzels

Ingredients:
- Brown Sugar: Helps to activate the yeast
- Yeast: I use dry active yeast
- Butter: for a delicious buttery dough
- Salt: both salt in the dough for added flavor and course salt for sprinkling
- All Purpose Flour: You could use bread flour also
- Baking Soda: This doesn’t actually go IN the pretzel bites, but in water to help create the classic pretzel crust
- Egg: For brushing on the pretzel to help develop the crust and help the salt to stick.

Homemade Soft Pretzel
Ingredients
- 1 1/2 cups warm water
- 2 tbsp brown sugar
- 2 tsp yeast
- 1/2 cup butter melted
- 2 1/2 tsp salt
- 4 1/2-5 cups all-purpose flour
- 1/3 cup baking soda
- 1 egg beaten
- Course Sea Salt
Instructions
- Combine water, sugar, yeast, and butter in a large bowl. Let sit for 5 minutes.
- Add the salt and 4 1/2 cups flour. Mix until combined. knead using the stand mixer for 3-4 minutes or by hand for 8-10 minutes. Add in more flour a little at a time if needed.
- Oil a bowl, add the dough and turn to coat with the oil. Cover and let rise until doubled, about 1 hour.
- In a shallow bowl or pan add water and baking soda. Set aside.
- Remove the dough from the bowl and place on a flat surface. Divide the dough into 12 pieces (about 2.5 oz each), Roll each piece into a long rope, about 22" long.
- Twist each rope into a pretzel shape (see video below). Then dip into water and baking soda solution and place onto a baking sheet. Repeat with remaining pieces.
- Brush the tops with the egg wash and season liberally with the salt. Bake at 425 F for 15 to 18 minutes until golden brown.
