These rosemary garlic roasted potatoes are simple to make and can be made using a single pan!
Ok! First off can we talk about how pretty these purple potatoes are? These came straight from my garden and I could NOT be happier! They are so so beautiful. With that being said, you absolutely do NOT have to use purple potatoes. Use whatever kind of potatoes you have on hand. I typically will use Yukon Gold potatoes (which I mixed in with the purple here). I have also made these with sweet potatoes and they were so yummy also.

Rosemary Garlic Roasted Potatoes
Ingredients
- 4 cups potatoes diced
- 3-4 tbsp olive or avocado oil
- 1 tsp salt
- 4 sprigs of Rosemary
- 2 cloves garlic minced
Instructions
- In a baking dish add potatoes and oil. Mix to combine.
- Add 1 tbsp fresh chopped rosemary, salt, and garlic to potatoes. Top with remaining sprigs of Rosemary.
- Bake at 350 for 20-30 minutes or until potatoes are soft.
