Ingredients you will need:
- Rice: I used the Minute Butter & Sea Salt Jasmine Rice Cups.
- Chicken: I used rotisserie chicken to speed up the process.
- Cucumber: the perfect vessel to hold everything together.

How to Make Cucumber Boats
- Prepare one Minute Butter & Sea Salt Jasmine Rice Cup according to package instructions.
- Cut a cucumber in half and scoop out the inside seeds.
- In a bowl smash avocado and add in prepared rice, shredded chicken, feta cheese, and scooped out cucumber. Mix to combine.
- Carefully skip rice mixture into hollowed out cucumbers and top with a sprinkle of everything bagel seasoning.
