Easy Chicken and Rice Cumber Boats | 15 Minute Recipe

Cucumber Boats filled with fluffy rice, shredded chicken, avocado, feta cheese, and everything bagel seasoning for the perfect snack or appetizer made in less than 15 minutes.

I’m always on the hunt for a simple lunch/snack that I can throw together in less than 15 minutes. Ingredients you will need: 

  • Rice: I used the Minute Butter & Sea Salt Jasmine Rice Cups. 
  • Chicken: I used rotisserie chicken to speed up the process. 
  • Cucumber: the perfect vessel to hold everything together. 
  • Avocado: helps to bind everything together. 
  • Feta Cheese: great flavor burst. 
  • Everything Bagel Seasoning: to add a little extra flavor boost

How to Make Cucumber Boats

  • Prepare one Minute Butter & Sea Salt Jasmine Rice Cup according to package instructions. 
  • Cut a cucumber in half and scoop out the inside seeds. 
  • In a bowl smash avocado and add in prepared rice, shredded chicken, feta cheese, and scooped out cucumber. Mix to combine. 
  • Carefully skip rice mixture into hollowed out cucumbers and top with a sprinkle of everything bagel seasoning. 

Tips For Success

  • Choose Fresh Cucumbers: Look for firm, fresh cucumbers for the best crunch and flavor.
  • Drain Excess Moisture: Pat the cucumbers dry after scooping out the seeds to prevent the filling from becoming watery.
  • Use Warm Rice: Mixing the ingredients while the rice is still warm helps blend the flavors together beautifully.
  • Make Ahead: Prepare the filling in advance and store it in the fridge for an easy meal prep option.

How to Store Leftover Cucumber Boats

  • Add a paper towel to the bottom of an airtight container, add cucumber boats, and store in refrigerator for 2-3 days.

  • ½ avocado
  • ¼ cup feta cheese crumbled
  • 1 tbsp everything bagel seasoning

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
