These Homemade Cherry Poptarts are so much better than the store-bought kind! They’re filled with homemade cherry jam and finished with a sweet and simple vanilla icing.

Homemade Cherry Poptarts

There’s something so nostalgic about biting into a warm, flaky Pop-Tart, especially when it’s homemade. Store-bought versions are convenient, but nothing beats the taste of a fresh, buttery pastry filled with sweet cherry goodness and topped with a drizzle of icing. Making homemade cherry Pop-Tarts is easier than you might think, and the results are absolutely worth it. Let’s dive in!

Homemade Cherry Poptarts ingredients

Ingredients

Homemade Pie Crust – you can save time and use store bought if preferred

  • 2 cups flour
  • 1 cup butter cold and cubed
  • 3-4 tbsp ice cold water
  • 1 egg

Cherry Filling – you can use store bought cherry pie filling if preferred

  • 3 cups sweet cherries pitted
  • 1/2 cup granulated sugar

Vanilla Glaze

  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 3-4 tbsp heavy cream

How to make homemade cherry pop tarts

Cherry Filling

  • In a medium sized saucepan add pitted cherries and granulated sugar. Cook over medium heat for 20-30 minutes until the sauce has thickened. Set aside for later.
  • If the sauce is not thickening to your desired consistency, or if you are wanting to speed up the process add 1 tbsp of cornstarch in with the cherry mixture while cooking.

Pie Crust

  • In a large bowl add cubed butter, salt and flour. Using a pastry cutter or two knives cut together the flour and butte until it resembles crumbly flour.
  • Slowly add in the ice cold water until the dough starts to come together. Once the dough starts to come together pour onto a counter and use your hands to combine the dough.

Pop Tarts

  • Preheat oven to 425.
  • Roll out pie crust to your desired thickness, cut dough into rectangles or use a cookie cutter to make shapes into the dough.
  • On half of your pie crust shapes spread 1 tbsp of cherry mixture. Being careful to leave a 1/2″ perimeter around your circle or rectangle jam free.
  • Top each jam crust with a second layer of crust and use a fork to crimp the edges to seal the two pieces of crust together. Place each crimped tart onto a baking sheet.
  • In a small bowl combine 1 egg with 1 tbsp water. Mix to combine.
  • Brush each tart with this egg wash and place in oven. Bake for 12-15 minutes until crust is golden brown.
  • While the tarts are baking combine powdered sugar, vanilla extract and heavy cream. Start with a smaller amount of heavy cream and add in enough to create a pourable consistency of frosting. Add food coloring if desired.
  • Remove tarts from the oven and spread a generous amount of frosting on the top. You can allow these to cool so that the frosting stays on thicker or eat straight from the oven if you have zero patience like me.

Tomato season is officially underway 🍅🌱

I finally got all of my tomato plants in the ground and filled the beds in with some of my favorite companion plants too! Not only do they help maximize space, but they also help attract pollinators, improve soil health, and keep pests away naturally. 

This year I’m planting:
✨ Basil – helps improve flavor + keeps pests away
✨ Marigolds – a garden must for pest control
✨ Onions – great companions for tomatoes
✨ Zinnias - not only are they pretty to look at, but they are great for attracting pollinators 

One of my favorite gardening tips is to never leave bare soil if you can help it. Filling in around your tomatoes makes the garden more productive AND prettier. 

Also, something I didn’t talk about is mulching my plants. I use grass clippings BEFORE my husband has done any kind of spraying on the lawn. This helps with moisture retention and controlling weeds! 

Now we wait for those summer tomato sandwiches 🍅
