These peanut butter baked oatmeal bites are a great on the go breakfast. They are easy to make and a fan favorite of the kids.
Now that I am breastfeeding I have been eating oatmeal in one shape or form daily. My favorite thing about oats is the versatility that they have, hot oatmeal, overnight oats, cookies, protein bites, smoothies, etc. the options are endless! My latest obsession has been baked oatmeal and making it into these muffin bites makes them even easier to grab and go. If you are nursing these peanut butter baked oatmeal bites are a great for your milk supply as well. Oats and coconut are suppose to be great milk supply boosters.
These baked bites only use one bowl and bake up in 20 minutes. You can add in so many extras as well depending on what you want. I love to top them with a little bit of maple syrup.

Peanut Butter Baked Oatmeal Bites
Ingredients
- 2 eggs
- 3 cups milk I used oat
- 4 cups oats
- 1 cup peanut butter
- 2 tablespoons coconut oil
- 2 tablespoons honey
- 1 cup shredded coconut
- 3/4 cup chocolate chips
Instructions
- Preheat oven to 350.
- Combine all ingredients into a bowl and mix well.
- Spray muffin pan or insert liners and fill each cup.
- Bake for 20-25 minutes.
- Top with maple syrup and enjoy.
