This southwest chicken dinner is not only super easy to make, it is a delicious healthy dinner that your family will love.

southwest chicken recipe

In case you missed it, I have been doing an easy weeknight dinner series over on Instagram and this southwest chicken recipe was one of the dinners this week. It is seriously so simple to make, but super yummy!

You could also make this even easier by throwing everything into a crockpot (minus the cheese, add that at the end) and cook it that way! I suggest cooking on low for 4-6 hours.

So what’s in the southwest chicken dinner?

southwest chicken, black beans, corn, bell pepper, cheese, salsa, taco seasoning

Ingredients for Southwest Chicken

  • chicken breast: this would be really good with chicken thighs also
  • taco seasoning: store bought or homemade
  • salsa: you can really customize the taste by choosing your salsa
  • corn: canned, fresh, or frozen
  • black beans: canned
  • bell pepper: any color works
  • shredded cheese: I used cheddar, but add your favorite

How to make Southwest Chicken

  • Preheat oven to 350.
  • In a skillet with a little oil add in diced peppers and onions until soft and translucent.
  • Place chicken breasts in a 13×9 pan and season with taco seasoning.
  • Add a layer of salsa to the top of each breast, then layer with beans, corn, onions and peppers. Top with shredded cheese.
  • Bake for 30-40 minutes.

Like I said! Super simple! You can control the level of spiciness with the salsa you choose. Our family doesn’t like anything super spicy so I opted for a mild salsa on our chicken. I served ours over rice, but it would be super yummy on a salad or in a wrap.

So, if you want a super easy dinner that your family will love PLUS is a healthy option, look no further! I got you covered. Want more easy dinner recipes? Check out my Cowboy Casserole or Creamy Smothered Pork Chops.

Comment HERBS for all the planter.

My @greenstalkgarden herb garden might be my favorite thing in the garden right now.

There’s something so special about stepping outside and grabbing fresh herbs for dinner. Basil, dill, rosemary, mint, all the herbs my heart desires.

Comment GRILL for both the recipes!

Grill girl summer is officially underway 🔥☀️

Turns out grilling is a whole lot less intimidating when you realize it’s basically just an outdoor oven with better flavor. Thanks @traegergrills.

Tri-tip for dinner, mixed berry cobbler for dessert, and not heating up the kitchen in the process? That feels like a win to me.

Also, respectfully, we are no longer leaving the grilling to the boys this summer.

This one is for those who don’t really like cake.

Homemade fresh mint chip ice cream, a fudgy cookie layer, and cookies & cream ice cream all stacked into one very perfect ice cream cake.

One of my favorite things about making desserts from scratch is getting to create flavor combinations you can’t always find at the store.

And honestly, that’s the fun of homemade, making exactly what you wish existed.
