This southwest chicken dinner is not only super easy to make, it is a delicious healthy dinner that your family will love.
In case you missed it, I have been doing an easy weeknight dinner series over on Instagram and this southwest chicken recipe was one of the dinners this week. It is seriously so simple to make, but super yummy!
You could also make this even easier by throwing everything into a crockpot (minus the cheese, add that at the end) and cook it that way! I suggest cooking on low for 4-6 hours.

Like I said! Super simple! You can control the level of spiciness with the salsa you choose. Our family doesn’t like anything super spicy so I opted for a mild salsa on our chicken. I served ours over rice, but it would be super yummy on a salad or in a wrap.

Southwest Chicken
Ingredients
- 4 chicken breasts
- 1 cup salsa
- 2 tablespoons taco seasoning
- 1 can black beans
- 1 can corn
- 1 bell pepper diced
- 1 onion diced
- 1 cup shredded cheese
Instructions
- Preheat oven to 350.
- In a skillet with a little oil add in diced peppers and onions until soft and translucent.
- Place chicken breasts in a 13×9 pan and season with taco seasoning.
- Add a layer of salsa to the top of each breast, then layer with beans, corn, onions and peppers. Top with shredded cheese.
- Bake for 30-40 minutes.
