This recipe idea actually came from my homemade baked potato soup recipe. But anytime I made it my husband always said he wished it had more protein to help keep him full longer. He had the great idea to add in ground beef! I also made a few other changes to the recipe as I wanted to be able to cook the potatoes right in the pan vs roasting them separately in the oven.

The actual name of this soup is heavily debated in our house. I prefer to call this hearty soup bacon cheeseburger soup (hence the title), but my husband adamantly calls this “hungry potato soup” because it is the perfect soup for my farmer after a long cold day. It is especially requested during the heart of calving season as he is outside in the cold in negative temperatures.

What is in Bacon Cheeseburger Soup?

  • Ground Beef
  • Bacon
  • Onion
  • Flour
  • Chicken Broth
  • Potatoes
  • Spices: paprika, salt, pepper
  • Cheddar Cheese
  • Heavy Cream

Instructions:

  1. In a large stock pot brown ground beef, bacon, and onion together.
  2. Add in flour, paprika, salt, and pepper to meat mixture. Stir to combine.
  3. Add in chicken broth and potatoes. Simmer for 15 minutes until potatoes are tender.
  4. Add in shredded cheese and heavy cream. Stir until cheese has all melted.

Ingredients

  • 1 lb ground beef
  • 1/2 lb bacon cut into 1" pieces
  • 1 onion diced
  • 1/2 cup all purpose flour
  • 4 cups chicken broth
  • 4 cups potatoes diced
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup cheddar cheese shredded
  • 1/2 cup heavy cream

    Tried this soup recipe and my family loved it. My husband said ” Don’t lose that recipe”!!!! It was great tasting at supper, and tasted just as great as left overs. Will definitely make this again.

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.
