Creamy Chicken, Broccoli, and Orzo Skillet

This Creamy Chicken, Broccoli, and Orzo Skillet is the perfect quick and easy one pan dinner!

Ingredients

  • Chicken - I used rotisserie chicken to speed up the process, but you can also dice up a chicken breast and cooked it after the onion but before you add in the orzo and broth.
  • Oil - I almost always use avocado or olive oil when cooking, but you can swap for whatever oil you have on hand.
  • Onion - diced finely adds flavor to the dish.
  • Broccoli - I used frozen, but fresh works great too!
  • Orzo - you can swap out for rice here, but the cook time will need to be adjusted
  • Heavy Cream - just a touch to add creaminess
  • Cheese - I used cheddar, but any of your favorites would be great
  • Seasonings - salt, pepper, and Italian seasonings.

How to Make Chicken and Broccoli Casserole

  • In a large skillet add oil and onion. Cook until onion begins to become soft and translucent.
  • Add in orzo, cooked chicken, chicken broth, salt, pepper, and Italian seasoning. Bring to a simmer, cover, and cook for 10 minutes. Stirring occasionally.
  • Once orzo is soft stir in heavy cream and shredded cheese. Stir until well combined and cheese is melted.
