The Pretzel Bites
To start, we’ll create the perfect pretzel bites. These bite-sized treats boast a golden crust and a tender, chewy interior. Here’s our simple recipe:
Ingredients:
- Brown Sugar: Helps to activate the yeast
- Yeast: I use dry active yeast
- Butter: for a delicious buttery dough
- Salt: both salt in the dough for added flavor and course salt for sprinkling
- All Purpose Flour: You could use bread flour also
- Baking Soda: This doesn’t actually go IN the pretzel bites, but in boiling water to help create the classic pretzel crust
- Egg: For brushing on the pretzel to help develop the crust and help the salt to stick.
Instructions:
- Combine water, sugar, yeast, and butter in a large bowl. Let sit for 5 minutes.
- Add the salt and 4 1/2 cups flour. Mix until combined. knead using the stand mixer for 3-4 minutes or by hand for 8-10 minutes. add in more flour a little at a time if needed.
- Oil a bowl, add the dough and turn to coat with the oil. Cover and let rise until doubled, about 1 hour.
- Bring water to a boil and carefully add the baking soda. It will boil over, so add slowly and be careful!
- Remove the dough from the bowl and place on a flat surface. Divide the dough into 8 equal pieces, about 4 1/2 ounces each. Roll each piece into a long rope measuring 22 inches and shape. Cut the dough into one inch pieces to make the pretzel bites.
- Boil the pretzel bites in the water solution in batches. Remove with a large slotted spoon. Place pretzel bites on a baking sheet that has been sprayed with cooking spray. Make sure they are not touching.
- Brush the tops with the egg wash and season liberally with the salt. Place bake at 425 F for 15 to 18 minutes until golden brown.
The Beer Cheese Dip
Now, let’s move on to the star of the show: the beer cheese dip! This creamy and flavorful dip will perfectly complement the pretzel bites. Here’s what you’ll need:
Ingredients:
- Butter and Flour: forms the base of the roux to thicken the sauce
- Beer: I really like the flavor of blue moon, but you can use whatever beer you prefer the flavor of. If you do not want to use beer sub in chicken broth.
- Milk: up the creamy factor
- Seasoning: garlic, Dijon Mustard, and Worcestershire Sauce.
- Shredded Cheese: I like to use a mixture of Colby jack and sharp white cheddar, but usually use whatever I have on hand
- Hot Sauce: adds a nice flavor without a lot of heat
Instructions:
- Melt butter over medium heat in a medium saucepan.
- Add flour. Whisk to combine until smooth and continue cooking for about 1 minute.
- Continue to whisk and slowly add in the beer and milk.
- Add garlic, mustard and Worcestershire sauce.
- Stir constantly for about 5 – 10 minutes, until thickened. The sauce should coat the back of a wooden spoon.
- Remove from heat and immediately stir in both cheeses and hot sauce.
- Salt and pepper to taste.
