Ingredients:
- Chicken: I use chicken thighs as they bake up much better without drying out.
- Potatoes: I love the baby new potatoes, but Yukon gold are great also!
- Tomatoes: Cherry tomatoes are my favorite. When you roast them they turn into little flavor bombs.
- Asparagus: I used purple asparagus, but regular green works great too!
- Seasoning: salt, pepper, paprika, garlic powder, onion powder
- Olive Oil: This can be swapped for your favorite cooking oil.
Instructions:
- Preheat oven to 350.
- In a small bowl combine salt, onion powder, garlic powder, and paprika. Set aside.
- On a large sheet pan add chicken thighs and potatoes. Drizzle with olive oil and seasoning mix (reserve 1 tsp of mix).
- Bake for 20 minutes.
- Remove from oven and add asparagus and tomatoes. Drizzle with more olive oil and remaining seasoning mix.
- Bake an additional 20 minutes.
- Remove from oven and enjoy!
