Sheet Pan Hasselback Potatoes and Kielbasa

This sheet pan dinner with Hasselback potatoes and Kielbasa is an easy and simple dinner with minimal prep needed and comes together in under an hour.

Ingredients for Sheet Pan Dinner

  • Kielbasa – or any kind of sausage that your family likes. The chicken sausages are also great here. This is an easy protein to keep on hand in the fridge or freezer.
  • Potatoes – I love a Yukon Gold potatoes, but use whatever you have on hand!
  • Brussel Sprouts – a great vegetable for roasting.
  • Parmesan Cheese – I love the nutty flavor that parmesan cheese adds
  • Onion – I used a white onion because that’s what I had on hand. Yellow or white onions work here.
  • Sauerkraut – This is something that younger me would not touch with a 10 foot pole, however older me has realized how good sauerkraut is for you! If you really don’t like it then you can leave it off.
  • Thyme – this has become one of my favorite herbs to add to dinners.

How to assemble

Someone once told me that sheet pan dinners aren’t actually “cooking”, but instead assembling. So, let’s just say that we need to assemble this dinner.

  • Preheat oven to 425. 
  • Hasselback the potatoes by thinly slicing the potatoes without fully slicing through. Alternatively you can simply quarter them. Add to a sheet pan. 
  • Thinly slice the onion and place onto the sheet pan. 
  • Slice the Brussel sprouts in half and place onto the sheet pan. 
  • Drizzle everything on the sheet pan with avocado oil and season with salt and pepper. Bake in oven for about 20 minutes or until the potatoes have started to soften. 
  • While those are cooking cut up the kielbasa and shredded the parmesan cheese. 
  • Add kielbasa, parmesan cheese, and fresh thyme to the sheet pan and place back into the oven for another 15 minutes. 
  • Once removed from the oven add on sauerkraut and enjoy!

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.
