Sweet Basil and Oregano Bruschetta Chicken Pasta

This bruschetta chicken pasta has great notes of basil and oregano and is super easy to put together for an quick weeknight meal.

This Bruschetta Chicken Pasta is made with the McCormick Gourmet Sweet Basil and Oregano Bruschetta Seasoning Mix. You could get a similar result by combining 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp salt, 2 tsp basil, 2 tsp oregano, 1 tsp pepper, 1 tsp paprika). While I would like to call this a sheet pan dinner. There is the additional step of cooking the pasta on the stove. So maybe we can call it a mock sheet pan recipe.

During the peak of garden season I’m always looking for ways to use up the tomatoes from the garden. This recipes fits the bill perfectly. Using up 2 lbs of cherry tomatoes you can also swap out with regular tomatoes, just dice them up smaller.

What do I need for Sweet Basil and Oregano Bruschetta Pasta?

McCormick Gourmet Sweet Basil and Oregano Bruschetta Seasoning Mix: you could get a similar result by combining 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp salt, 2 tsp basil, 2 tsp oregano, 1 tsp pepper, 1 tsp paprika

Olive Oil: a good quality olive oil really does make a difference. I love my olive oils from Ampersand Oil & Vinegar and you can read more about your olive oil here.

Balsamic Vinegar: again I love a good quality balsamic and I get mine from Ampersand Oil & Vinegar and you can read more about your vinegars here.

Tomatoes: Cherry tomatoes from the garden are my favorite. Larger tomatoes can also be used if they are cut up into smaller pieces.

Chicken: I used chicken breasts and shredded them after cooking. However, I would prefer to cut into smaller chunks before cooking so I didn’t have to worry about shredding.

Pasta: This recipe uses cavatappi, but any will work. I really think spaghetti would be great here.

Servings: 6

Ingredients

  • 1/3 cup Sweet Basil & Oregano Bruschetta Seasoning Mix
  • 1/3 cup olive oil
  • 1 tbsp balsamic vinegar
  • 1 lb chicken breasts cut into 1" pieces
  • 2 lb cherry tomatoes quartered
  • 8 oz pasta I used cavatappi
  • 1/2 cup parmesan cheese grated

Instructions

  • Preheat oven to 425
  • In a small bowl combine bruschetta mix, balsamic vinegar, and olive oil.
  • On a sheet pan place tomatoes and chicken. Pour olive oil mixture over the top and toss to combine.
  • Bake in oven for 25 minutes.
  • While the chicken cooks, cook pasta according to package. Drain, rinse, and set aside.
  • Combine pasta and chicken mixture (with all juices) and top with parmesan cheese.

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
