Fried Chicken Bites

Crispy chicken has never been better with these Fried Chicken Bites. Inspired by the LC Valley Famous Bite Size Steak, these Chicken Bites are marinated, breaded, and fried to perfection.

Fried Chicken Bites

Ingredients

  • Chicken Breast – this can be swapped out for chicken tenderloin or boneless chicken thights
  • Chicken Broth – for the marinade mixture
  • Honey – for the marinade mixture
  • Worcestershire Sauce – for the marinade mixture
  • Seasonings – garlic powder, pepper, salt, paprika
  • Flour – for the breading
  • Cornmeal – for the breading
  • Cornstarch – for the breading
  • Oil – for frying

How to Make Fried Chicken Bites

  1. Cut chicken breast into 1” cubes. 
  2. Add chicken breast to a large bowl with remaining marinade mixture ingredients, mix to combine, cover and place into the refrigerator for 30 minutes – 2 hours. 
  3. In a second large bowl add breading mixture ingredients. Mix to combine. 
  4. Drain marinade from chicken and add chicken to the breading mixture. Toss to evenly coat chicken. 
  5. Add 2-3 inches of Crisco to a deep pan and heat over medium heat until oil is approximately 350F. Use a thermometer for accuracy. 
  6. Drop breaded chicken bites into heated oil being careful not to over crowd the oil. Cook for 5-7 minutes until crust is golden brown and chicken reads at least 165F. 
  7. Carefully remove from the oil and place onto a wire cooling rack.

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
