Ingredients

For the Red Velvet Brownies

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon Vanilla
  • ¼ cup Cocoa Powder
  • 1 cup All-purpose Flour
  • 1 tablespoon Vinegar
  • ¼ teaspoon Salt
  • ½ teaspoon Red Food Coloring
  • ¾ cup White Chocolate Chips optional

For the Cookies and Cream Fudge

  • 1 1/4 cups granulated sugar
  • 6 tbsp butter
  • 1 cup marshmallow fluff
  • 1 cup white chocolate chips
  • 1/3 cup milk
  • 10 oreos crushed

For the Glaze

  • 2 cups powdered sugar
  • 3-4 tbsp heavy cream
  • blue food coloring

Instructions

For the Red Velvet Brownies

  • Line a 9-inch square pan with parchment paper and preheat the oven to 350.
  • Cream together the butter and sugar.
  • Add the eggs, egg yolk, food coloring, vinegar and vanilla and mix together. Be careful not to overmix.
  • Add the flour, salt and the cocoa powder and whisk together gently until completely combined.
  • Gently fold in white chocolate chips, if using.
  • Pour the brownie batter into the prepared pan and bake for 20 – 25 minutes or until a skewer comes out with just moist crumbs on it.
  • Remove from the oven and let cool before moving on to the fudge.

For the Cookies and Cream Fudge

  • Melt butter in a heavy saucepan over medium heat. Add the milk and the sugar.
  • Bring to a boil, stirring constantly and boil for 4-5 minutes. It’s strongly suggested that you use a candy thermometer to see if the mixture is 235 F/113 C which is the temp for “soft-ball” stage.
  • Once the mixture is at soft-ball stage, add the marshmallow cream, vanilla and the white chocolate chips. Stir until the morsels are melted and everything is well incorporated. Then fold in the crushed oreos.
  • Spread it in on top of the cooled brownies and let set for 1 hour.

For the Glaze

  • Combine all glaze ingredients into a small bowl. Mix to combine adding enough heavy cream for your desired consistency. Spread on top of the set fudge and enjoy!

Turns out grilling is a whole lot less intimidating when you realize it’s basically just an outdoor oven with better flavor. Thanks @traegergrills. 

Tri-tip for dinner, mixed berry cobbler for dessert, and not heating up the kitchen in the process? That feels like a win to me.

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I wanted the nostalgic crunch of those strawberry cheesecake ice cream bars… but with raspberry and an actual cheesecake twist. So naturally I had to make it happen. 

And honestly? This might be one of those recipes that makes you stop after the first bite and think, where has this been my whole life?
