If I’m being honest no one else in my family would eat this Blackberry Basil Flatbread Pizza. However, I love fun and unique pizza combinations like this. When I want to experiment with new pizza flavors these easy flatbread pizza are perfect! While the rest of the family enjoys their traditional choices, you’ll be savoring a slice of summer magic.

The Crust: Creating a Foundation for Delight

Before we dive into the fun and unique flavors of this pizza, let’s start with the foundation – the easy flatbread crust. With just a few simple ingredients and a little patience, you’ll have a crispy and chewy crust ready to be topped with the goodness of blackberries, basil, and ricotta.

Easy Flatbread Ingredients:

  • all purpose flour
  • baking powder
  • salt
  • olive oil
  • water

Instructions:

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Gradually add the water and olive oil to the dry ingredients, stirring until a dough forms.
  3. Knead the dough for a few minutes until it becomes smooth and elastic.
  4. Cover the dough with a clean kitchen towel and let it rest for about 20 minutes.
  5. Roll out the dough on a floured surface until it reaches your desired thickness.
  6. In a skillet with a little bit of oil cook the flatbread for 2-3 minutes per side.
  7. Remove the crust from the oven and let it cool slightly before adding the toppings.

  • parmesan cheese
  • mozzarella cheese
  • blackberries
  • ricotta cheese

  2. In a small bowl smash the blackberries, reserving a handful to top the pizza.
  3. Spread smashed blackberries evenly over the cooled flatbread crust, leaving a small border around the edges.
  4. Sprinkle with parmesan cheese and mozzarella cheese.
  5. Dollop on ricotta cheese and a few blackberries.
  6. Place the pizza on a baking sheet and bake for an additional 5-7 minutes, or until the toppings are heated through.

Ingredients

Easy Flatbread

  • 1 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp olive oil
  • 1/3 cup water

Blackberry Pizza

  • 1/2 cup parmesan cheese shredded
  • 1/2 cup mozzarella cheese shredded
  • 1/2 cup blackberries
  • 1/4 cup ricotta cheese
  • fresh basil

Instructions

Easy Flatbread

  • In a large bowl combine all the flatbread ingredients. Mixing to combine. Shape into a bowl and allow to rest for 20 minutes. 
  • Separate into 2 pieces and roll out into a thin crust. 
  • In a preheated skillet with a little bit of oil cook each piece of flatbread over medium heat for 2-3 minutes. 

Blackberry Basil Pizza

  • Preheat oven to 450. 
  • In a small bowl smash the blackberries (leaving a few out to top the pizza later). Spread this mixture onto a piece of flatbread. 
  • Top the blackberry mixture with parmesan and mozzarella, remaining blackberries, and a few dollops of ricotta. 
  • Bake for 5-8 minutes or until the cheese has melted. Top with fresh basil

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
