Blackberry French Toast Muffins

These overnight French Toast Muffins are the perfect bites of french toast, but in easy to grab cups! Start these the night before for an easy breakfast.

Ingredients

  • Eggs
  • Heavy Cream
  • Milk
  • Brown Sugar
  • Cinnamon
  • Vanilla Extract
  • Bread - I like to use brioche
  • Blackberries

Crumb Topping

  • Butter
  • Brown Sugar
  • Flour

How to Make French Toast Muffins

  • Preheat oven to 350°F and grease a twelve-hole muffin tin.
  • In a large bowl, whisk together the eggs, milk, heavy cream, brown sugar, cinnamon and vanilla.
  • Add the bread cubes and the berries, if using, and stir until well-coated.
  • Cover and let marinate together overnight (atleast 6 hours)
  • Scoop into prepared muffin tin, filling almost all the way to the top of each.
  • In a small bowl, combine the crumb topping ingredients and spoon over the muffin cups.
  • Bake for 18-20 minutes or until the tops are a light golden brown.
  • Top with maple syrup for best results.

  • 1 loaf thick cut bread cubed
  • 1 cup blackberries
Crumb Topping
  • ¼ cup butter softened
  • ¼ cup brown sugar
  • ¼ cup flour

  3. Add the bread cubes and the berries, if using, and stir until well-coated.
  4. Cover and let marinate together overnight (atleast 6 hours)

  6. In a small bowl, combine the crumb topping ingredients and spoon over the muffin cups.
