Cheesy Garlic Zucchini Bites

These cheesy garlic zucchini bites are a delicious and healthy snack or appetizer. They are made with simple ingredients that you probably already have on hand, and can easily be made gluten free. 

Cheesy Garlic Zucchini Bites

If you’re looking for a delicious and healthy snack, side dish or appetizer option, look no further than these cheesy garlic zucchini bites. Packed with flavor and made with simple ingredients, they are sure to be a crowd-pleaser. Plus, they can easily be made gluten-free. Served with a side of marinara your family will surely love them!

I made this batch and the only 4 bites were left, the picky kids and husband devoured them!

Ingredients

To make these cheesy garlic zucchini bites, you’ll need the following ingredients:

  • 4 cup zucchini shredded
  • 3 cloves garlic minced
  • 1 cup breadcrumbs
  • 1 cup parmesan cheese shredded
  • 1 cup cheddar cheese shredded
  • 4 large eggs
  • 1 tbsp fresh thyme
  • 1 tbsp fresh basil
  • 1 tsp salt

Instructions

  1. Preheat oven to 425. 
  2. Place shredded zucchini onto a paper towel to soak up some of the extra water. You can also spread it thin and sprinkle with a little salt to draw out more moisture. The more you pull out the crispier these will get. 
  3. In a large bowl combine eggs, garlic, basil, tyme, and parmesan. Add in zucchini and bread crumbs. 
  4. Using a cookie scoop scoop out 24 bites. Each one will be approximately 2 tbsp. 
  5. Place each bite onto a parchment lined baking sheet. Sprinkle each bite with cheddar cheese. 
  6. Bake for 23-28 minutes.

Serving Suggestions

These cheesy garlic zucchini bites can be enjoyed as a snack on their own or served as an appetizer at your next gathering. They pair well with marinara sauce or a homemade garlic dip.

Gluten-Free Option

To make these zucchini bites gluten-free, swap the regular breadcrumbs for gluten-free breadcrumbs.

POV: An almond croissant and a latte had a baby and it resulted in your new coffee obsession. 

INGREDIENTS
2 tsp butter
2 tsp brown sugar
1/2 tsp vanilla bean paste 
1/8 tsp almond extract 
2 shots espresso
8 oz milk

INSTRUCTIONS
Add butter, brown sugar, vanilla bean paste, and almond extract to a small cup. Brew your espresso over top and mix to full dissolve the sugar. 

FOR AN ICED LATTE: Add ice to a 16 oz cup, then milk, and top with espresso mixture. Mix and enjoy. 

FOR A HOT LATTE: steam milk to desired temperature and pour over espresso mixture.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I love companion planting because every plant has a purpose. Some help attract pollinators, some deter pests, and some simply help maximize space in the garden beds. And honestly… mixing veggies and flowers together just makes the garden feel magical. 🌼🐝

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.
