This cowboy pasta is my pasta spin on my viral cowboy casserole recipe. Super simple and delicious.

My first ever viral recipe was my Cowboy Casserole recipe, a twist on the traditional tater tot casserole using hashbrowns instead of tater tots. It is a family favorite and one that we have on repeat often. However, the other night I was getting ready to make my cowboy casserole recipe and realized that I was out of hashbrowns! So, since I already had the base created I cooked up some pasta and used it instead. This is true magic that happened in this pot!
Ingredients
- Ground Beef – I will often add in a little extra ground beef for a protein boost
- Onion Soup Mix – I make my own or use the packet
- Cream of Mushroom Soup – again! I make my own, but you can use the canned stuff
- Milk – any milk can be used!
- Sour Cream – adds creaminess and tang to the sauce
- Shredded Cheese – I used cheddar
- Pasta – add in your favorite shape, but I love this pasta because it has 2 simple ingredients and is high in fiber.
- Bacon – life is just better with bacon!
How to Make Cowboy Pasta
- Cook pasta according to package. Drain and set aside.
- Add ground beef to the skillet and cook until brown.
- Add Lipton onion, cream of mushroom soup, milk, sour cream, 1/2 cup cheese, and cooked bacon. Stir until combined.
- Add in cooked pasta and top with remaining cheese. Cover and let the cheese melt on top.

- 1 tbsp lipton onion soup mix packet
- 2 cans cream of mushroom soup
- 1/4 cup milk
- 1/4 cup sour cream
- 1 cup shredded cheese
- 12 oz pasta
- 1/2 lb bacon cooked + crumbled
Instructions
- Cook pasta according to package. Drain and set aside.
- Add ground beef to the skillet and cook until brown.
- Add Lipton onion, cream of mushroom soup, milk, sour cream, 1/2 cup cheese, and cooked bacon. Stir until combined.
- Add in cooked pasta and top with remaining cheese. Cover and let the cheese melt on top.
