Creamy chicken gnocchi with sun-dried tomatoes, Parmesan, and garlic makes the perfect one-pan dinner in under 30 minutes.

When you need a cozy and comforting dinner that comes together in under 30 minutes, this creamy chicken gnocchi recipe hits the spot. Made with tender rotisserie chicken, pillowy gnocchi, rich Parmesan, and bursts of flavor from sun-dried tomatoes, it’s a one-pan meal the whole family will love.

Whether you’re looking for a weeknight dinner idea or a recipe to impress guests, this creamy gnocchi skillet is hearty, flavorful, and incredibly easy to make.

Ingredients Breakdown

  • Rotisserie chicken: A quick and easy protein that adds savory flavor. Sub with cooked chicken breasts or thighs if preferred.
  • Seasonings: pepper, paprika, garlic powder, Italian seasoning, salt Build depth of flavor for the chicken and sauce. Adjust to taste or use your favorite spice blends.
  • Olive oil & butter: The combination adds richness and helps brown the chicken beautifully.
  • Garlic: Fresh garlic infuses the sauce with warm, aromatic flavor. Garlic powder can be used in a pinch.
  • Chicken broth: Provides the base for the creamy sauce while keeping it light. Vegetable broth also works.
  • Heavy cream: Adds indulgent creaminess—substitute with half-and-half for a lighter version.
  • Parmesan cheese: Melts into the sauce for a nutty, salty finish. Pecorino Romano makes a nice swap.
  • Sun-dried tomatoes: A tangy-sweet pop of flavor that brightens the sauce. You can leave them out or use roasted red peppers instead.
  • Gnocchi: Soft, pillowy dumplings that cook right in the sauce. Potato gnocchi is traditional, but cauliflower or gluten-free versions work, too.

Instructions

  1. In a large skillet, heat olive oil and butter over medium-high heat.
  2. Add the chicken and seasonings. Cook 4–5 minutes per side, until golden and fragrant.
  3. Stir in garlic, chicken broth, and gnocchi. Bring to a simmer and cook 3–4 minutes, until the gnocchi is tender.
  4. Mix in sun-dried tomatoes, heavy cream, and Parmesan. Stir until the cheese melts and the sauce turns creamy.
  5. Serve warm and enjoy!

Tips for Success

  • Use a large skillet to ensure the gnocchi cooks evenly in the broth.
  • For extra creaminess, stir in a splash more cream or top with fresh mozzarella.
  • Garnish with fresh basil or parsley to add color and freshness.
  • Leftovers reheat well on the stove with a splash of broth or cream to loosen the sauce.

Serving Suggestions

This creamy chicken gnocchi pairs perfectly with:

  • A crisp green salad with vinaigrette
  • Roasted vegetables such as broccoli or asparagus
  • Garlic bread or a crusty loaf for soaking up the sauce

Final Thoughts

If you’re craving a comforting, creamy pasta dish, this chicken gnocchi with sun-dried tomatoes is a must-try. It’s easy enough for weeknights but rich enough for special occasions. Try it once, and it might just become your new favorite one-pan dinner.
