This Creamy Italian Sausage Gnocchi Skillet is a quick 30-minute dinner for a cozy and flavorful one-pan meal perfect for weeknights.

If you’re looking for a comforting weeknight dinner that’s ready in under 30 minutes, this Creamy Italian Sausage Gnocchi Skillet is about to become your new go-to. It has everything you want in a quick pasta dish: savory ground Italian sausage, pillowy gnocchi, juicy burst tomatoes, and a silky parmesan cream sauce that brings it all together. It’s rich, hearty, and full of classic Italian flavors without requiring a long ingredient list or hours in the kitchen.

Because this skillet meal cooks in just one pan (after the gnocchi is boiled), it’s perfect for busy weeknights, cozy Sunday dinners, or when you need something comforting fast. Serve it as is, or pair it with a simple green salad and crusty bread to complete the meal. It’s simple, satisfying, and guaranteed to become a family favorite.

Why You’ll Love This Creamy Sausage Gnocchi

  • It’s ready in 30 minutes from start to finish.
  • Uses simple, everyday ingredients but tastes restaurant-quality.
  • A true weeknight one-skillet dinner with minimal cleanup.
  • Comfort food perfection with balanced flavor and texture.
  • Easily customizable with veggies, spice level, or protein swaps.

Ingredients You’ll Need

  • Italian Sausage – Adds savory depth, richness, and classic Italian flavor. Use mild or hot depending on your spice preference. Ground chicken or turkey sausage works too.
  • Garlic – Brings warmth and aroma. Freshly minced garlic delivers the best flavor, but pre-minced works in a pinch.
  • Italian Seasoning – A simple blend that enhances every element of the dish. You can substitute with a mix of dried basil, oregano, and thyme.
  • Potato Gnocchi – Soft, pillowy dumplings that cook in minutes and soak up the creamy sauce beautifully. Shelf-stable, refrigerated, or frozen all work. I love using the refrigerator “skillet ready” gnocchi since they don’t need to be boiled first!
  • Cherry Tomatoes – Once sautéed, they burst and create a bright, juicy layer of flavor. Grape tomatoes or chopped Roma tomatoes are great substitutes.
  • Spinach – Adds color, nutrients, and balances the richness of the sauce. Kale or arugula can be swapped in.
  • Heavy Cream – Creates a velvety, rich sauce. You can use half-and-half for a lighter version, though the sauce won’t be as thick.
  • Parmesan Cheese – Adds saltiness, umami, and helps thicken the sauce. Pecorino Romano or an Italian blend also work well.

How to Make Creamy Italian Sausage Gnocchi

Step 1: Cook the Gnocchi
Boil gnocchi according to package instructions, drain, and set aside. NOTE: I love to use skillet ready gnocchi from the refrigerator section because it doesn’t need to be boiled! You can just add it in step 5.

Step 2: Brown the Sausage
In a large skillet over medium heat, cook the sausage until fully browned and no longer pink. Drain excess grease.

Step 3: Add Garlic and Seasoning
Stir in garlic and Italian seasoning, and sauté for 1–2 minutes until fragrant.

Step 4: Burst the Tomatoes
Add sliced cherry tomatoes and cook until they soften and begin to burst, releasing their juices.

Step 5: Bring It All Together
Add cooked gnocchi, spinach, heavy cream, and parmesan cheese. Stir until everything is coated in the creamy sauce and the spinach has wilted.

Serve warm and enjoy a cozy, flavorful skillet meal that tastes like it came straight from an Italian café.

Helpful Tips

  • Don’t skip browning the sausage—it adds a ton of flavor.
  • If your sauce feels too thick, add a splash of chicken broth or pasta water.
  • Want a spicy kick? Use hot sausage or add red pepper flakes.
  • For extra veggies, throw in mushrooms, onions, or zucchini.

Closing Thoughts

I hope this Creamy Italian Sausage Gnocchi Skillet becomes one of those recipes you find yourself making again and again. It’s simple, comforting, and packed with flavor, everything a weeknight dinner should be. If you give it a try, I’d love to hear what you think! This one is for those who don’t really like cake.

Homemade fresh mint chip ice cream, a fudgy cookie layer, and cookies & cream ice cream all stacked into one very perfect ice cream cake.

One of my favorite things about making desserts from scratch is getting to create flavor combinations you can’t always find at the store.

And honestly, that’s the fun of homemade, making exactly what you wish existed.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I wanted the nostalgic crunch of those strawberry cheesecake ice cream bars… but with raspberry and an actual cheesecake twist. So naturally I had to make it happen.

And honestly? This might be one of those recipes that makes you stop after the first bite and think, where has this been my whole life?

Sweet, creamy, crunchy, raspberry perfection.

Would you try raspberry over strawberry? 👇

Episode 9 of the garden series and the garden is finally starting to fill in 🌱✨

This week I planted:🌶️ Peppers with onions, cilantro and marigolds🫘 Beans alongside potatoes and marigolds🥒 Cucumbers with dill, carrots, and radishes🌸 PLUS all the flowers — zinnias, dahlias, snapdragons, strawflower, celosia, and feverfew

I love companion planting because every plant has a purpose. Some help attract pollinators, some deter pests, and some simply help maximize space in the garden beds. And honestly… mixing veggies and flowers together just makes the garden feel magical. 🌼🐝

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.

Which plant are you most excited to watch grow this season? 👇
