Ingredients You’ll Need

For the Burgers

  • Ground Beef: Juicy and flavorful. Opt for 80/20 for the best smash burger crust.
  • Seasonings: salt, onion powder, garlic powder, paprika, pepper. A simple spice blend that enhances the natural beef flavor.
  • Gruyère Cheese: Melts beautifully with a nutty, creamy flavor. Substitute Swiss or provolone if needed.
  • Brioche Buns: Buttery and soft, they toast up perfectly on the griddle.

For the French Onions

  • Onions: The star of the show—slow-cooked until caramelized and jammy.
  • Butter: Adds richness and helps the onions caramelize.
  • Salt & Pepper: Balances and enhances the flavor.
  • Garlic: Adds depth and savoriness.
  • Balsamic Vinegar: A touch of sweetness and tang.
  • Worcestershire Sauce: Boosts umami flavor.
  • Wine or Beef Broth: Deglazes the griddle and adds depth. Use red or white wine, I use whatever I plan to drink along side it.
  • Fresh Thyme: A fragrant, herby note.

How to Make a French Onion Smash Burger on the Blackstone

Make the French Onions

  1. Preheat your Blackstone griddle to medium-low heat.
  2. Add butter, onions, salt, and pepper. Cook slowly for about 20 minutes, stirring frequently, until the onions are soft, jammy, and deeply caramelized. Lower heat if they start to burn.
  3. Stir in garlic, thyme, balsamic vinegar, Worcestershire sauce, and wine (or broth). Let it bubble and reduce for about 30 seconds. Remove from griddle and set aside.

Smash the Burgers

  1. Mix seasonings (salt, onion powder, garlic powder, paprika, pepper) in a small bowl.
  2. Divide ground beef into 4 patties and season both sides.
  3. Cook patties on the griddle for 4–5 minutes per side, smashing slightly for crispy edges.
  4. Add cheese slices on top of each patty and let them melt.
  5. Toast brioche buns on the griddle until golden brown.

Assemble Your Burgers

  • Spread mayo on the bottom bun.
  • Add the cheesy burger patty.
  • Pile on those caramelized French onions.
  • Top with the other bun and serve hot!

Recipe Notes

  • Make-ahead onions: Save time by caramelizing onions a day or two in advance and reheating before serving.
  • Customize your cheese: Gruyère is traditional, but Swiss, Havarti, or provolone all work great.
  • Double the batch: These burgers disappear fast, so make extras!

Serving Suggestions

Pair your French Onion Smash Burger with:

  • Crispy French fries or sweet potato fries
  • A simple green salad for balance
  • A cold beer or glass of red wine to complement the rich flavors

Final Thoughts

This French Onion Smash Burger on the Blackstone is truly next-level. It takes everything you love about French onion soup—the sweet caramelized onions, the melty cheese, the rich flavors—and layers it onto a juicy, crusty smash burger. It’s comfort food at its finest, and once you make it, you’ll crave it again and again.

Equipment

  • 1 Blackstone Griddle

Ingredients

For the Burgers

  • 1 lb ground beef
  • 1/2 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 4 slices gruyere cheese
  • 4 brioche burger buns

For the French Onions

  • 2 onions thinly sliced
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cloves garlic minced
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1/4 cup wine or beef broth
  • 1-2 sprigs fresh thyme

Instructions

Make the French Onions

  • Preheat your griddle to medium low heat.
  • Add butter, onions, salt and pepper. Allow them to cook down and deeply caramelize for about 20 minutes, stirring frequently, until the onions become very dark, soft and jammy. If the onions start to burn turn down the heat.
  • Add in the garlic, thyme, wine or broth, Worcestershire, balsamic, and allow it to bubble up and reduce for about 30 seconds. Remove mixture from the griddle and set aside.
  • NOTE: the French onions can be made ahead of time. Simply reheat them before assembling your burger.

Make the Burgers

  • In a small bowl combine the salt, onion powder, garlic powder, paprika, and pepper. Set aside for later.
  • Divide the ground beef into 4 patties.
  • Season patties on both sides with the seasoning mixture.
  • Add patties to the griddle and cook for 4-5 minutes before flipping and cooking an additional 4-5 minutes.
  • Add your slices of cheese and allow them to get nice and melty before removing from the griddle.
  • During the last few minutes add the burger buns to the griddle and allow them to get nice and golden brown. Be careful because the extra butter in the brioche buns cause them to brown quickly.
  • Assemble your burger with a bottom bun, mayonnaise, burger patty, French onions, and top bun. Enjoy!

20 minute homemade ice cream?! This is going to be the best summer ever!

Watch me creating every flavor combo of my dreams this summer.

What should I try first?

Comment CHEESECAKE for all the recipe details.

One of my favorite things about making things homemade is getting to create something you wish existed in the world.

I wanted the nostalgic crunch of those strawberry cheesecake ice cream bars… but with raspberry and an actual cheesecake twist. So naturally I had to make it happen.

And honestly? This might be one of those recipes that makes you stop after the first bite and think, where has this been my whole life?

Sweet, creamy, crunchy, raspberry perfection.

Would you try raspberry over strawberry? 👇

Episode 9 of the garden series and the garden is finally starting to fill in 🌱✨

This week I planted:🌶️ Peppers with onions, cilantro and marigolds🫘 Beans alongside potatoes and marigolds🥒 Cucumbers with dill, carrots, and radishes🌸 PLUS all the flowers — zinnias, dahlias, snapdragons, strawflower, celosia, and feverfew

I love companion planting because every plant has a purpose. Some help attract pollinators, some deter pests, and some simply help maximize space in the garden beds. And honestly… mixing veggies and flowers together just makes the garden feel magical. 🌼🐝

The vision is finally starting to come together and I cannot wait to see everything explode with growth over the next few weeks.

Which plant are you most excited to watch grow this season? 👇

Tomato season is officially underway 🍅🌱

I finally got all of my tomato plants in the ground and filled the beds in with some of my favorite companion plants too! Not only do they help maximize space, but they also help attract pollinators, improve soil health, and keep pests away naturally.

This year I’m planting:
✨ Basil – helps improve flavor + keeps pests away
✨ Marigolds – a garden must for pest control
✨ Onions – great companions for tomatoes
✨ Zinnias - not only are they pretty to look at, but they are great for attracting pollinators

One of my favorite gardening tips is to never leave bare soil if you can help it. Filling in around your tomatoes makes the garden more productive AND prettier.

Also, something I didn’t talk about is mulching my plants. I use grass clippings BEFORE my husband has done any kind of spraying on the lawn. This helps with moisture retention and controlling weeds!

Now we wait for those summer tomato sandwiches 🍅

#ad | These Cowboy Burgers are a MUST this grilling season, and the ground beef I grabbed from my local @KrogerCo Family of Stores made them perfect for feeding a crowd.

Juicy, smoky, loaded with all the good stuff… aka the kind of burger that disappears the second it hits the table.

Save this for your next summertime cookout + drop “BURGER” 🍔 if you can’t wait to make these!
