This Garlic Butter Chicken Skillet is made on the Blackstone and is a quick and easy dinner made all in one.
I recently got a Blackstone grill and I am LOVING it! It has been so easy to cook on and I love that dinner clean up has been so easy to do! The only dishes that we have to do are plates from dinner and the bowls I use to bring food outside. So not having to wash pots and pans has been a major win for this mom!
Ingredients
- Butter – unsalted works best
- Garlic – minced garlic for the garlic butter, but you could swap with garlic powder as well.
- Chicken – I use cubed chicken breast, but you can also use chicken tenders or boneless chicken thighs.
- Potatoes – we love Yukon gold, but your favorites will work. Even sweet potatoes would be good here.
- Seasoning – salt, paprika, garlic powder, onion powder
How to Make Garlic Butter Chicken on the Blackstone
- Preheat Blackstone to medium heat adding a thin coat of oil to the surface.
- In a small bowl mix together butter and minced garlic. I like to set this on the Blackstone to melt, but you can also melt in the microwave.
- Add diced potatoes to one side of the griddle and pour about 1/2 cup of water on top. The water will help to steam cook the potatoes and cook them faster. Cook for about 15 minutes before flipping.
- After flipping the potatoes add chicken to the other half of the grill and cook for 6-8 minutes per side. Season the chicken and potatoes with the salt, paprika, onion powder, and garlic powder.
- Once the chicken is fully cooked combine the potatoes and chicken. Pour melted butter and garlic on top of chicken mixture and toss together to even coat everything.
- Layer on shredded cheese. Cook on the grill until the cheese is fully melted then remove and enjoy!
Can I make this if I don’t have a Blackstone?
Absolutely! Here is how I would cook this if I was using a skillet.
- In a large skillet over medium heat cook the bacon until crispy and remove. Chop up bacon.
- In a small bowl combine ranch seasoning, salt, garlic powder, onion powder, and paprika.
- Add potatoes to the skillet, season with half of the seasoning mix and cook for about 20 minutes until potatoes are fork tender and the outside is crispy. Remove and set aside.
- Add chicken to the skillet, season with remaining seasonings and cook for about 5-8 minutes per side.
- Once chicken is completely cooked add potatoes back in, top with cheddar cheese and bacon. Cook until cheese has melted and enjoy!
