Herb Compound Butters Garlic Chive Blossom

Garlic Chive Butter

  • Butter
  • Chives (plus the blossom if you have it!)
  • Garlic
  • Salt

  • Butter
  • Radishes
  • Salt

Jalepeno Honey Butter

  • Butter
  • Jalepenos – I used fresh, but canned would add a little more spice
  • Honey

  • Maple Syrup
  • Cinnamon

  • Butter
  • Blackbery Jam
  • Fresh Thyme

How to Make Compound Butters

  • In a medium bowl combine all ingredients for each specific compound butter. Mix until fully combined.
  • Add butter to a place of parchment paper and shape into a log shape. Twist ends and store in the refrigerator until firm.

Ingredients

Garlic Chive Butter

  • 4 oz butter
  • 3-4 tbsp finely chopped chives
  • 1 clove garlic minced
  • 1/2 tsp salt

Radish Butter

  • 4 oz butter
  • 1/4 cup finely grated radish excess water drained
  • 1/2 tsp salt

Jalepeno Honey Butter

  • 4 oz butter
  • 3-4 tbsp finely diced jalepenos
  • 2-3 tbsp honey

Cinnamon Maple Butter

  • 4 oz butter
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon

Blackbery Thyme Butter

  • 4 oz butter
  • 3-4 tbsp blackberry jam
  • 1 tbsp fresh thyme

Instructions

  • In a medium bowl combine all ingredients for each specific compound butter. Mix until fully combined.

These French Onion Scones are flaky, savory, and packed with caramelized onions, Gruyère cheese, and fresh thyme.

Ingredients
For the Scones:
2½ cups all purpose flour
½ tsp salt
1 tbsp baking powder
12 tbsp cold butter grated
1 egg
1 cup buttermilk
1 cup gruyere cheese shredded
1 tsp thyme
1/4 cup heavy cream
flakey salt

French Onions
2 onions
2 tbsp butter
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
2 cloves garlic minced
1 tbsp worcestershire sauce
1 tbsp balsamic vinegar

Instructions
French Onions
Add butter to skillet. Once hot and melted, add the onions, salt and pepper, and allow them to cook down and deeply caramelize for about 20 to 25 minutes, stirring frequently, until the onions become very dark, soft and jammy.
Add in the garlic, Worcestershire, and balsamic vinegar, and allow it to bubble up and reduce for about 30 seconds. Allow mixture to simmer until reduced.
Set aside to cool.
Scones
Preheat oven to 350℉. In a large mixing bowl, mix together flour, baking powder, and salt.
With a cheese grater, grate your cold butter and mix into dry ingredients with your hands until it reaches a crumbly texture.
Create a well in the center of your bowl and add egg and buttermilk. Mix until just combined.
Fold in shredded cheese and french onions; you want the dough to be just sticky enough to stick to your hands.
Pour mixture onto a floured surface and shape into a circle. Cut into 6-8 scones, the same way you would a pizza. Then place onto a parchment lined baking sheet.
Brush with heavy cream, sprinkle with flakey salt and bake at 350 degrees F for 20-25 minutes or until lightly golden on edges.
